The spirit imbuing the growth and geographical diversity of the wines to be found in our wine cellar springs from the belief held by Juan José Rementeria (the driving-force behind its becoming one of the Restaurant's key features), that a satisfying meal depends on the accompaniment of a fine wine.

Whites and reds feature predominantly on our wine racks but there are, of course, some of the more renowned names in rosés and Cavas, as well as some of the finest names sweet wines.

Forthwith we shall introduce you to a sample of some of these white wines, which reflects a huge diversity in terms of origin, production and variety of grape. These range from the traditional: Viura, Verdejo, to the outstanding Albariño from the Rias Baixas in Galicia, or our own local Hondarribi Zuri, which is used in producing the Basque white wines, txakolis, which are rapidly earning a reputation amongst the finest white wines in the country. As for international varieties, special mention should be made of the Chardonnay grape which has achieved quite magnificent results in such regions as Navarre, Catalonia or Somontano.

As in all wine cellars the bulk of our stock consists of hundreds of bottles of red wine from different categories of ageing: Crianzas, Reservas or Grandes Reservas. Amongst these one may find marvellous traditional wines from La Rioja and other wine producing areas, together with those referred to as high profile (which have currently achieved a status of such prominence). At this stage it would be advisable to pause for a moment on our range of wines from the privileged region of La Rioja, whose quality has been ratified by the exclusive award of Qualified Label of Origin. Enjoying both recognised prestige and praise abroad, these wines produced from the autochthonous grape, Tempranillo, are characterised by the full-bodied taste of the fruity young wines which becomes velvety with ageing. The Crianzas, Reservas and Grandes Reservas are highly recommended for enjoying the wealth and sophistication of their flavours. With the intention of bringing these delights to your palate, our wine list allows you to sample the wines from some our renowned vineyards, the bodegas, such as Marqués de Riscal, Remírez de Ganuza or Martínez Bujanda, without forgetting other areas of La Rioja Alta, from where we have selected wines of such prestige as those produced by Bodegas Bilbainas, Marqués de Vargas, Muga or the Señorío de San Vicente.

Yet we are not limited to La Rioja. Our racks hold fine wines from the Ribera del Duero region, such as Alión 95 /96 or a magnificent Pesquera from 95. We should also be thankful for the rise to prominence at the head of the country's reds of a region such as Navarre, which is principally renowned for its rosés but which is gradually finding its place amongst the elite of red wines, with such bodegas as Julián Chivite, the flag-ship of the region with its 125 anniversary, without forgetting its Crianzas and Reservas. .

In recent years and thanks to their determination and constancy a number of bodegas have flourished in regions hitherto little known. Such is the case of Enate in the Somontano. This has meant that research into all kinds of varieties of grape is producing some extraordinary results, such as the Merlot-Merlot or its Reserva Cabernet Sauvignon. Finally, we should mention two wines from their respective regions for which a great future is in store:

Numanthia: in Toro, where the establishment of a bodega belonging to the Eguren family is beginning to bear fruit.

Ceremonia: in Utiel- Requena

ROSADOS
Our range of rosés is more limited, although you may always sample a Rioja (Campillo), or the traditional yet quite superb Gran Feudo from Navarre or a surprising Enate from the Somontano.

CAVA
In so far as Cavas are concerned, our recommendations focus on two of the region's renowned bodegas: Codorniú and Juvé Camps

SWEET WINES
It is further affirmed that the lingering impression of a meal that is left by the dessert is perhaps the one most firmly etched on the diner. Be that the case, there is nothing better, then, than to accompany our desserts with the range of traditional and imported sweet wines featured on our wine list. Take such examples as: a P.X. from Osborne (1872) a muscatel from Gran Feudo, Sol de Alicante, Monte de Croce from Verona (Italy) a 10-year Port or the famous Tokaji from Hungary.

All this without ignoring the vast range of liqueurs in our cellars, Brandies, Whiskies, Armagnacs, eau-de-vies etc.
